Taking inspiration from this much-loved Pizza Pilgrims classic, our lasagne heroes ânduja sourced straight from Calabria. Home to the red-hot Calabrian chilli pepper which gives ânduja its unmistakable red hue and fiery kick, Calabria is the spiritual homeland of Italyâs spiciest sausage: locals even hold a yearly âPeperoncino Festivalâ every October in the coastal town of Diamante.Â
Evoking the signature Pizza Pilgrimsâ topping, which delights with rustic dollops of spicy ânduja atop a traditional margherita base, we mix generous spoonfuls of the fiery Calabrian sausage with tomato ragĂč, bĂ©chamel and fior di latte mozzarella, all layered between fresh pasta sheets. Interestingly, âfior di latteâ literally translates as âflower of the milkâ and is named as such not only to signal its sweet and delicate flavour, but also to distinguish that itâs made with pure cow's milk as opposed to traditional buffalo mozzarella, originally made in Naples with buffalo milk. We think youâll find this balance of creaminess & spice a match made in (southern Italian) heaven.
